I’ll be building a large solar dryer for Splendid. There is a good design in Ken Newmyer’s book, “Sailing the Farm”. The answer is yes, we will dry large amounts of fruit, veggies, and fish :)

Have you considered that for long term food storage? I’m gardening this summer and we don’t have a big enough freezer to freeze our excess, plus the power outages we get in winter storms leaves the frozen foods too vulnerable. Canning sounds like too much work.
